Vegan Sweet Potato Tacos


acho your average tacos. These sweet potato tacos are the best way to celebrate #TacoTuesday. Of course it all depends if you add a Margarita or two.. Β You can make the tortilla-less nacho version on the side with the same ingredients – just using the sweet potato as base.

Sweet Potato Tacos


  • 1 medium sweet potato
  • 2 corn tortillas ( gluten free option go for brown rice tortillas)
  • 1/2 tbsp olive oil
  • pepper to taste
  • pinch of sea salt
  • pinch of paprika
  • Toppings:

  • Chopped avocado
  • Vegan pepper jack cheese
  • grated carrots
  • For the slaw:

  • 1/4 cup of purple cabbage
  • juice of half a lemon
  • a pinch of brown sugar
  • 1/4 tsp of honey
  • 1/4 tsp of chopped cilantro
  • pinch of sea salt
  • pinch of pepper


  1. Turn your oven to 350 F first. Take your medium sweet potato and peel it. Take a spiralizer and if you have options, opt for the thin or medium-thin spiral. The end result should resemble sweet potato fries.
  2. Place sweet potato in parchment paper in the baking pan. Drizzle with olive oil and seasonings. Mix. Bake for about 10 minutes, be on the lookout for it so it doesn’t over cook.
  3. Place tortillas in taco holders, add even amounts of spiralized sweet potato on each. Add slaw, add toppings and voila!
  4. ENJOY!!
