Gluten Free Bagel With Cashew Spread

Yum, there’s nothing tastier than a bagel sandwich, these gluten-free plain bagels from Udi’s are great toasted and even better in this combo. To make the sandwich, I made a chipotle cashew spread (recipe below) tomato, avocados, arugula and fluffy scrambled eggs made with organic fresh eggs, some vegan butter spread by Earth Balance and a tsp of almond milk.

Chipotle Cashew Spread

Cashew Spread



Ingredients

  • 1 cup of cashews (soaked overnight)
  • 12 pinches of paprika
  • 6 pinches of chili powder
  • juice of one lime
  • 1 tbsp of garlic powder
  • 1 tbsp tahini
  • salt and pepper to taste
  • 1/4 cup of warm water

Directions

  1. Add everything to food processor.
  2. ENJOY!
