When That Beet Drops: Easy Beet Hummus


This recipe will leave you feeling so upbeet! Ok- ย but in all seriousness there is nothing more tasty and filling that some good old hummus, but this recipe steps up the flavor! I spread it on top of Udi’s Gluten Free bagels, (they are soooo good) and you end up feeling so full but without the heavy gut feeling.


Beet Hummus

Beet Hummus


  • 1/2 cup of olive oil
  • 2 cloves garlic, peeled
  • 2 beets, peeled
  • 3/4 tahini
  • kosher salt to taste
  • juice of one small lemon


  1. Grab your peeled beets and garlic cloves and wrap in aluminum foil. Bake for 1hr at 350F.
  2. Once it’s done, remove from oven. Open the foil and add beets and cloves to food processor. Add the rest of the ingredients, tahini, salt, olive oil and lemon juice.
  3. Serve and enjoy!
