Curried Chickpeas With Brown Rice


This recipe will curry your favor, it’s vegan, gluten free and dairy free. Hoorah! If you’re craving some spice lately, this will do. Let me know how it works out for you.

Curried Chickpeas with Brown Rice

Curried Chickpeas with Brown Rice


  • 1 cup of brown rice
  • 2 tbsp of coconut oil
  • 1 cup of chopped red onion
  • 2 garlic cloves, minced
  • 1 tbsp grated ginger
  • 2 tbsp curry powder
  • 1 can of stewed tomatoes, drain
  • 1 1/2 cup of vegetable broth
  • 2 cans chickpea drain and rinsed
  • Tiny sprigs of basil for decoration


  1. Cook the rice according to packet instructions.
  2. Use a large skillet and bring it to medium heat, heat the coconut oil and add the onion, garlic and ginger. Sautรฉ for 5 minutes or until the onion is tender.
  3. Stir in the curry powder and continue cooking for about a minute.
  4. Add the tomatoes and the vegetable broth. Cook for 5 for minutes.
  5. Add the chickpeas and cook until the mixture looks thickened or around 10 minutes.
  6. When your rice is ready create a bed for the chickpea mixture. Spoon some of the chickpea mixture on top and garnish with basil sprigs.
