Cashew Pasta Sauce

Contrary to popular belief, creamy pasta does not require DAIRY! This gut-friendly, dairy free sauce is just as good as any, even better! Pair it with any brown pasta of your liking. Try it, let me know what you think!

Creamy Cashew Sauce

Creamy Cashew Sauce



Ingredients

  • 1 tbsp of olive oil
  • 1 small onion diced
  • 1 cup of blanched cashews
  • 1/2 tsp of salt
  • 1/2 tsp of vegetable stock
  • 1 small garlic clove
  • 2 tbsp lemon juice
  • 1 tbsp aminos
  • 3/4 cup water

Directions

  1. Heat olive oil in a fry pan on low medium heat.
  2. Cook onion for about 2 minutes, until starting to soften. Transfer onion to a food processor or blender, along with remaining sauce ingredients and blend until very smooth and creamy.
  3. Add a bit more water to achieve a consistency you like.
  4. Enjoy!
