Our Clean Version Of Chicken + Waffles

unday’s are great for brunch and recipe tasting! There’s always that chance that you will hit the jackpot and create something so good, your taste buds can’t believe it!

I’m thinking of adding a #brunchbetter series for those who would like to see their brunch favorites re-invented in a healthier way. Behold, a
mouthwatering
chicken + waffle sandwich, a brunch classic. (Mimosas not included.)

Clean Chiken and Waffle Sandwich



Ingredients

    For the quinoa crusted chicken:
  • 1/2 organic chicken breast seasoned
  • 1 flax egg
  • 1 cup of cooked quinoa
  • 1 tsp of garlic powder
  • 1 tsp of cayenne powder
  • salt and pepper to taste
  • For the garbanzo waffle:

  • 1 cup of garbanzo flour
  • 1 cup of water
  • 2 tbsp of olive oil
  • salt and pepper to taste
  • Paprika baked frieds:

  • 1 small sweet potato, cut horizontally
  • 1 tsp of paprika
  • 1 tsp of olive oil
  • salt and pepper to taste

Directions

1. Pre-heat oven to 350F. Prepare a baking pan and line it with parchment paper, coat with olive oil.
2. In a small bowl, add 1/2 cup of flax meal to 1 cup of water to make the flax egg. Let it sit for 5 minutes.
3. Slice the seasoned chiken breast into desired shaped.
4. Add the cooked quinoa to a bowl and season with garlic, cayenne, salt and pepper to taste.
5. Grab a piece of chicken and dip into the flax seed, remove and dip into quinoa. Repeat until all pieces of chicken are thoroughly covered in quinoa. Place carefully on baking pan.
6. In a bowl mix the sweet potato fries and cover them in olive oil, at the paprika, salt and pepper to taste and mix. Remove from bowl and place careful unto the same pan as the chicken, you can just line them up like in the photo above.
7. Place pan in oven and bake for around 20-30 minutes until fries are done and the quinoa chicken is looking golden and crispy.
8. Meanwhile, turn on the waffle griddle on high heat and coat with olive oil.
9. In a separate bowl combine the granola flour, olive oil and water, salt and pepper to taste. Whisk and then pour mixture into coated waffle griddle.
10. Once the waffles are done you can place them on a separate plate and maintain them inside the oven to keep them crispy if the chicken and fries are not done yet.
11. Once everything is ready, assemble your sandwich, waffle, greens (I used basil), cashew sauce, chicken, avocado, cashew sauce, then waffle. You can add anything else to this sandwich that’s of your appeal.
12. Add the fries on the side and enjoy!
