Wok This Way – Brown Rice Vermicelli Stir Fry

Brown Rice Vermicelli Stir Fry

Brown Rice Vermicelli Stir Fry



Ingredients

  • 1 cup of cooked brown rice vermicelli
  • assorted veggies
  • 1/3 cup of coconut aminos
  • 1 package of truvia
  • 1/2 small onion chopped
  • juice of 1/2 lemon
  • pinch of garlic
  • pinch of ginger
  • 1 tbsp of sesame seeds

Directions

1. In a small pot, heat water until it’s boiling. 1 cup is almost half of the brown rice vermicelli package. Only leave it for about a minute, it cooks really fast. Drain and set aside.
2. In a medium skillet, add the onion and brown using olive oil. Do not burn them, once they start getting a translucent color, add in the assorted veggies. Cook for about 3-4 minutes.
3. Add in the brown rice to the skillet and mix. Add in sesame seeds.
4. For the sauce, mix the coconut aminos, the package of Truvia, garlic, ginger and the lemon juice.
5. Transfer vermicelli into a plate and add sauce.
6. Enjoy!
